For busy cooks everywhere, here are a couple of delicious, quick, and easy chicken entrees that are sure to please your family and friends.  Choose Quick and Easy Pecan Chicken Breasts or Grilled Lemon Garlic Chicken.  I’ll bet you’ll really want to try both. Both of these recipes need to marinate overnight.  Spend a few minutes before bedtime or while preparing dinner the night before to put the chicken in the marinade and refrigerate.  The next day when you are ready to make dinner, your chicken will cook in only minutes.QUICK AND EASY PECAN CHICKEN BREASTS4 (about 1 1/4 lb total) boneless, skinless chicken breasts1/2 cup creamy Italian dressing1/2 cup fresh bread crumbs1/2 cup finely chopped pecans1/4 cup butterPlace chicken in a ziptop plastic bag and pour the dressing over the chicken. Marinate in the refrigerator from 1 hour to overnight. Drain and discard marinade.In a shallow bowl or pie plate, combine the bread crumbs and chopped pecans. Dredge the chicken breasts through the crumb mixture pressing to coat well.In a large skillet, over medium heat, melt the butter. Add chicken to skillet and cook 5 to 6 minutes on each side or until tender and cooked through. GRILLED LEMON GARLIC CHICKENThis chicken marinates overnight. In a large glass baking dish, combine the lemon juice, lemon zest, canola oil, garlic, thyme, parsley, chives, oregano, salt and pepper; add chicken and cover. Refrigerate overnight.Remove chicken from refrigerator, drain and discard the marinade. Grill chicken until cooked through. Garnish with parsley sprigs and lemon slices, if desired. Enjoy!

Ingredients

350g pasta twirls or shapes450g cooked chicken25g plain flour150ml single cream1 tbsp French mustard300ml chicken stock25g butter1/2 lemon (juice and grated rind) salt and pepper

Method

Firstly chop the chicken into small pieces. Cook pasta in boiling water as per instructions. Melt butter in a saucepan, add flour and cook, stirring for 1 minute. Remove from heat and stir in stock gradually. Place pan back on heat bring to boil, stirring all the time until thickened. Next add the French mustard, cream, lemon juice and rind to the sauce, season to taste, and heat gently. Drain pasta, serve in dishes, pour sauce over pasta. Perfect.

Saucy Chicken Drumsticks Recipe(serves 4)

Ingredients

8 free range chicken drumsticks1 tbsp olive oil2 tbsp Worcestershire sauce2 tbsp tomato sauce4 drops of Tabasco sauceMethodFirst step is to preheat your oven to around 180C. In a bowl, mix the Worcestershire sauce, Tabasco sauce, tomato sauce and olive oil together, mix well. Next place the chicken drumsticks on a baking tray (which is covered in foil) and coat the chicken with the sauce. Place in the oven and bake for approximately 40 minutes or until cooked. Delicious eaten hot or cold. Perfect for party food too.

It really isn’t hard to get a quick and healthy meal on the table in a matter of minutes. You can feed your family an inexpensive, nutritious meal in about a half hour. Here are a couple of chicken entrees to get you started. Try the Quick and Easy Chicken Parmesan that is table ready in a matter of minutes. If you prefer mushrooms, try the Sauteed Chicken with Mushrooms. Both of these recipes are also perfect for diabetics.

QUICK FIX CHICKEN PARMESAN

4 skinless, boneless chicken breast halves 2 cans (14.5 oz ea) Italian-style stewed tomatoes 2 tbsps cornstarch 1/2 tsp basil 1/4 tsp oregano 1/4 tsp hot pepper sauce, optional 1/4 cup grated Parmesan cheese

Preheat oven to 425 degrees. Place chicken in an oblong baking dish. Bake, covered, for 15 minutes at 425 degrees; drain. In a 2-qt saucepan, combine the tomatoes, cornstarch, basil, oregano and the pepper sauce, if using. Cook the tomato mixture, stirring constantly, until thickened. Pour the hot sauce over the chicken and sprinkle the Parmesan cheese over the top. Return chicken to oven the bake, uncovered, for 5 more minutes. Garnish with parsley sprigs, if desired.

SAUTEED CHICKEN WITH MUSHROOMS

4 skinless, boneless chicken breasts 1/3 cup flour 1 tsp salt 1/4 tsp fresh ground black pepper 3 tbsps butter 1/4 tsp minced garlic 1 cup sliced green onions 8-oz fresh mushrooms, sliced* 3/4 cup chicken broth 1 can (10-oz) cream of mushroom soup

Pound each chicken breast to 1/4-inch thickness. Mix flour, salt, and pepper together in a shallow bowl. Coat chicken well with the flour mixture and set in refrigerator while preparing the onions and mushrooms.

Heat the butter over medium-high heat in a large skillet. Add the garlic, onions, and mushrooms and saute for about 3 minutes. Remove vegetables with a slotted spoon. Get chicken from the refrigerator and add to the skillet. Cook the chicken for about 5 minutes each side. Add broth and soup to the skillet. Cook, stirring often, for about 5 minutes. Return the mushroom mixture to the skillet and reduce heat to low. Simmer, stirring occasionally, for 5 minutes. Serve immediately while hot.

*You may substitute 1 cup canned mushrooms that have been drained.

Serve this chicken dish with some hot buttered noodles or rice.

Chicken has been a family favorite and a cook’s standby since our earliest days.  And sometimes it is just hard to improve on the old fashion recipes grandma used.  Here are two chicken recipes from my vintage recipe collection.  Baked Chicken Breasts is a chicken rice dish.  Add a salad or a vegetable side and you have a meal.  This dish goes together quickly and bakes for 2 hours.  Put it in the oven and forget about dinner until a few minutes before it is done.  Miz Rowena’s casserole is a perfect way for diabetics to enjoy macaroni and cheese.BAKED CHICKEN BREASTS8 chicken breastssalt to tastepepper to taste1 can cream of celery soup1 can cream of mushroom soup1 1/4 cups milk2 cups instant rice1/2 envelope of dry onion soup mixPreheat oven to 325 degrees.Arrange chicken breasts, skin side up, in a greased oblong baking dish. Sprinkle with salt and pepper. In a medium bowl, whisk together both soups, milk and rice. Pour mixture over the chicken breasts. Sprinkle the dry soup mix over the top. Cover pan with aluminum foil and bake at 325 degrees for 2 hours. MIZ ROWENA’S CHICKEN & MACARONI CASSEROLEThis recipe is from an old Southern Indiana newspaper clipping.2 to 3 cups cubed chicken (or turkey) that’s been cooked2 cups uncooked elbow macaroni1 can cream of chicken soup, undiluted1 can cream of mushroom soup, undiluted2 cups milk1/2 lb Velveeta cheese, cubed1/2 cup diced onion4 hard-boiled eggs, optionalMix all the ingredients together in a big bowl with a lid. Cover and refrigerate overnight or at least half a day. Remove from the refrigerator 30 minutes before baking time. Lightly grease a 9 x 13-inch baking pan or dish. Spoon mixture into the pan and bake in a preheated 350 degree oven for 1 hour.Note: Modern day advantage: You can melt the cheese in the milk in the microwave before mixing the ingredients. Enjoy!

Discover The Best Chicken Recipe for Barbeques

Chicken that has been barbequed is definitely one best way of enjoying a delicious meal and plays a significant role in food history as well as within the barbeque genre.

This certain recipe was shown on “Paula’s Home Cooking” called “The Deen’s Brothers Barbeque Chicken”. This dish is cooked using a grill or an oven and requires these ingredients:

1 large chicken approximately three and a half pound cut up to 8 pieces

1/4 tsp of cayenne-pepper

1/2 a tsp of dried powder of mustard

1/4 tsp of liquid-smoke

1 tsp of ‘Worcestershire sauce’

2 tbsps of orange-juice

1/4 c of dark-brown sugar

1 c of ketchup

Preheat oven up to 190C (375F) while preparing your grill (brush grill with olive oil). Mix all your ingredients using one bowl excluding your chicken and set aside one-third cup of your barbeque sauce.

Next, add your chicken together with the rest of your sauce inside your bowl ensuring that it’s completely coated and covered with sauce. Put your chicken onto your covered grill, you may also opt to use a roasting pan then cook them for about forty to forty-five mins or till cooked thoroughly. Get the one-third cup of sauce intended for basting your chicken right after twenty minutes has passed.

What’s great in this chicken barbeque recipe includes  quick & very easy cooking style. Creating a ‘liquid smoke’ would be tricky, and Wikipedia taught me that the chicken’s barbeque sauce would create that smoky taste or flavoring even if your chicken’s not necessarily smoked (smoking takes a complicated and long process). You may or may not opt to do this when your sensitive with its flavor or smell.

What I did to make this great recipe more fantastic is I used only thigh parts rather than the ‘whole’ chicken. Since I find thighs of chicken more juicy compared to other chicken parts. Thigh parts cook fast, so no long waiting time for those other chicken parts to get cooked.

INGREDIENTS

 

Papaya-200 gm

 

Carrot-100 gm

 

Curd-1/2 litre

 

Salt-2 tsp

 

                    Heat oil in a frying pan.Add mustard seeds, papaya and carrot,and stir well for 15 mins.Add curd to the frying pan and stir again.Add adequate salt. 

 

 Chicken-Peas Curry

 

 INGREDIENTS

 

 Chicken-1/2 kg

 

 Carrot-200 gm

 

 Peas-200 gm

 

 Turmeric powder-4 tsp

 

 Coriander powder-4 tsp

 

 Onion(Big)-200 gm

 

 Chilly powder-3 tsp

 

                            Heat oil in a frying pan.Add mustard seeds,Onion(Big).Add Chicken pieces to it and heat until well-cooked.Put turmeric powder,coriander powder and mix well.Add carrot,peas and stir well for 5 mins.Add 3 cups water and boil.Add salt and chilly powder.

 

Chicken-Pepper Curry

 

INGREDIENTS

 

Chicken-1/2 kg

 

Carrot-200 gm

 

(Grated)

 

Onion(Big)-150 gm

 

(Grinded)

 

Pepper-5 tsp

 

Green Chilly-10

 

(chopped)

 

Turmeric powder-4 tsp

 

Coriander powder-4 tsp

 

                               Heat oil in a frying pan.Add mustard seeds, Onion, carrot,and stir for 5 mins.Add the Chicken pieces to it and heat until well-cooked.Add pepper and mix well.Put turmeric powder and coriander powder and mix well.Add 3 cups water and boil.Add adequate salt.

 

Corn Masala

 

INGREDIENTS

 

Corn-150 gm

 

Onion(Big)-150 gm

 

(grinded)

 

Turmeric powder-2 tsp

 

Chilly powder-1 tsp

 

Salt-1/2 tsp

 

                         Heat oil in a frying pan.Add mustard seeds to it.Add grinded Onion,Corn and stir for 10 mins.Put  turmeric powder,chilly powder,salt and stir well.

BBQ Chicken Recipe – BBQ chicken with an orange glaze

This tasty BBQ chicken recipe benefits from having a clean citrus edge and sweetness to round up the flavours in this dish. The orange juice may be substituted with apple if you prefer.Ingredients:6 chicken fillets, trimmed1/2 litre orange juice3 tbls tomato ketchup or passata (concentrated sieved tomatoes)2 tbls demerera sugar1 tsp dried thyme1/4 tsp Tabasco sauce or your favourite pepper sauce1 tbls cider vinegarDirections:In medium or large sized saucepan add the orange juice, tomato, demerera sugar, cider vinegar, herbs and pepper sauce and bring to a rolling boil. Lower the temperature to a gentle simmer and stir gently and constantly until the sugar has completely dissolved.Divide the sauce mixture into half and allow it to cool. Place 1/2 sauce in a plastic or glass container and place in your fridge and place the remaining half of the sauce and in an oven-proof dish. At this stage you can now add the prepared chicken breasts to a baking dish and mix it thoroughly with the sauce.Cover the chicken and sauce mixture, and refrigerate it for at least 4 hours, overnight is preferable for the best flavour.Now turn on your grill to around 150f and add a little oil to the grill rack to prevent the chicken from sticking.Remove chicken from refrigerator and add a light spray of oil to the chicken pieces and generously coat them with the marinade. Place the chicken on the grill and cook for 10 or so minutes on each side until it the chicken has cooked through properly, and test to make sure that the juices run clear.

Continue to coat the chicken with the remaining marinade during cooking being careful not to add too much. Once the chicken has cooked through with the sauce, it will have a shiny fruit glaze and will be ready to serve.

BBQ Chicken Recipe – Try this deliciously tempting BBQ Chicken recipe

BBQ chicken recipe ingredients

2 x 4-5lb roasting chickens

Olive Oil

Dark Soy sauce

Black pepper

Marinade the roasting chickens first by basting them with equal parts of olive oil, dark soy sauce and crack over about half a tablespoon of black peppercorns. For best results place the roasting chickens on the upper rack area of your BBQ smoker at around 250f to 300f for around 4 or so hours until the internal temperature of the chickens reach 180f.

Tend to your smoker once or twice during the smoking process and top up with wood chips as appropriate. Don’t forget to add some extra water to the smokers water pan to ensure that your chickens are getting a light moist smoke throughout the whole cooking process.

Once the chicken has cooked properly, remove the whole chickens from your smoker and wrap them in some plastic freezer bags or aluminium foil and leave the birds to rest for around 30 minutes or so.

Now that the chickens have had plenty of time to absorb the flavours and rest, remove them from your wrap, and gently pull off the tender meat and discard the BBQ chicken juices. A Weber Smoky Mountain or Big Green Egg are ideal smokers for 2-4 medium sized roasting chickens but you can use any smoking apparatus that you have to hand and cook as many as you wish according to the amount of people you have to feed using the same recipe.

Cooking “low-and-slow” on your smoker or grill is the best way to go if you are looking for the best tasting BBQ chicken. Lowering cooking times and turning up the temperature will allow you to serve your meats faster to your guests, but the results will not be as good.

Once you have removed the wings and legs, carefully cut along the breastbone of each chicken and cut it into a few pieces to your liking. You should notice how tender the meat is as you will observe all of the remaining moisture in the meat because you have cooked your chicken to perfection. It is now time to serve the meat to your guests and enjoy that delicious BBQ chicken taste.
