Preparing Chicken Tortilla Soup Recipes: Slow-Cooker vs. Standard Pot

Nothing fills the belly and warms the heart quite like a good chicken tortilla soup recipe. Made with real chicken, peppers, tortilla strips, tomatoes and more, the chicken tortilla soup is a delicious food that the entire family will enjoy.

There are dozens of different types of recipes available for making these soups. Each one has its own unique twist, as there is no such thing as a “traditional recipe” – even within Mexico, the ingredients that go into these soups can vary by region, with each one having its own special flavor for you to enjoy.

That said, you will generally find a chicken tortilla soup recipe that is cooked in one of two methods:

Hot spices, for example, tend to become bland and bitter if cooked for too long. This can be a problem, and will limit the number of recipes you will be able to use.

Standard Pot

Benefits

Standard pots allow you to cook quickly and easily, ready to make an entire meal for you and your family. You will not need to worry about the meal being done when you are ready for it, nor will you be unpleasantly surprised by a poor tasting food since you can test your soup as you cook it. There are also far more recipes designed for the standard pot than there are for the Crockpot.

Weaknesses

Standard pots can damage nutrients, and require you to be constantly at work cooking the soup before your meal. You cannot prepare ahead of time with the standard pot, as the chicken is not meant to sit for very long before serving.

Both of these cooking methods have their benefits and weaknesses for your chicken tortilla soup needs. A slow cooker will allow you to prepare the food ahead of time for consumption so that it is ready by the time you are ready to enjoy it, and it may be able to retain greater nutrient levels, but standard pots are faster, easier, and work with many of the traditional recipes. Chicken is one of the most popular meats to be eaten in the world. Everyday, millions of people consume chicken in a variety of ways. I personally like to prepare my chicken in a variety of ways. My recipe box is full of hundreds of chicken based creations that I could not possibly choose one favorite! Grilling chicken outside is always fun when you are having a family cookout. Warm chicken soup is very nice to eat in the cold of the winter. Chicken wraps make for a quick, healthy lunch. I would guess that I love chicken so much that I consume it almost daily. The best thing about cooking chicken is that the possibilities are endless…You could cook chicken every day for a year, and never eat the exact same meal twice!

 

Grilled Ginger Apricot Chicken Breasts 
 
3 chicken breasts, split (with bone in)
1/3 cup apricot preserves
1/4 cup lemon juice
1 tablespoon minced fresh ginger
2 teaspoons Dijon mustard
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
Prepare a medium-hot fire in grill.
In a small saucepan, warm preserves, lemon juice, ginger, mustard, salt and
pepper over medium heat, stirring, just until preserves melt, about 2 minutes.
Grill chicken, skin side down, 10 minutes.
Turn and grill 5 minutes.
Brush with some of glaze and continue to grill, turning occasionally and
brushing with more glaze, until chicken juice run clear when pricked with a
knife, 15 to 20 minutes longer.
Stop basting about 5 minutes before chicken is done.

ARTICHOKE PASTA SALAD

Ingredients

1 cup salad macaroni

6 oz marinated artichoke hearts

4 pound mushrooms, sliced

1 cup halved cherry tomatoes

1 cup med pitted ripe olives

1 tablespoon parsley

2 teaspoon dry basil

Directions

Cook macaroni according to package; drain well, rinse with cold water and

drain again. Turn into a large bowl. Add artichokes and their liquid,

mushrooms, cherry tomatoes, olives, parsley and basil; toss gently.

Cover and refrigerate for at least 4 hours. Before serving this easy recipe, season with salt and pepper to taste.

BLUE CHEESE STUFFED MUSHROOMS

Ingredients

20 lg Fresh mushrooms

2 tb Butter or margarine

1/4 c Finely chopped red pepper

1/2 c Heavy cream

1/3 c Crumbled blue cheese

1 1/2 c Cooked rice

1 tb Minced fresh basil

1/8 ts Ground white pepper

Directions

Clean mushrooms with damp paper towel. Remove mushroom stems; finely chop stems and set aside. Saute mushroom caps in butter in skillet until almost tender; drain on paper towels. Saute mushroom stems and red pepper in skillet. Add cream; bring to a boil. Reduce heat and add cheese; cook until melted. Stir in rice, basil, and pepper; cook until thoroughly heated. Spoon rice mixture into mushroom caps. Place mushroom caps in greased shallow baking pan. Cover and bake at 350 F for 10 minutes or until tender. Drain on paper towels. CHINA SAM’S CHICKEN WINGS

Ingredients

1/4 c Lite Teriyaki Marinade

1/4 c Oriental BBQ Sauce, Kikkoman

1/4 c Lee Kum Kee, (oyster sauce)

1 tb Brown sugar

12 md Chicken wings, whole

1 ts Oriental Season, Amyway

1 ts Hot and Spicy Stir Fry Season

1 ts Soy, Kikkoman

Directions

Separate drumette from rest of wing. Place on broiler pan skin side down. Season with Oriental Seasoning and Hot and Spicy Stir Fry Seasoning (from Calaphon). Place on middle rack of preheated oven to broil. As wings start to cook, begin making dipping sauce. Place Teriyaki, Oriental BBQ, Soy and brown sugar together, whisk. When wings start to color good, 10 minutes or so, remove from oven and turn over, season slightly, return to oven. When wings are Golden brown on this side, remove. Dip and shake of excess sauce. After all have been dipped return to broiler pan and return to oven. Let broil until a bit crusted, not more than a few minutes. This fried chicken recipe is great as an appetizer or side dish with fried rice. Try with a glass of plum wine. Originally from Miss BeHavin’s Haven, 1993.

Chicken With Bacon, Banana, and Peanuts

There’s so much you can do with chicken. This is a quite original dish containing banana and peanuts. It’s originally a Swedish dish called “Flygande Jakob” which means ”Flying Jacob”  in English. The name derives from the founder of the recipe, Ove Jakobsson who was a flight freight manager. The recipe reached the magazines in 1975. The original version is supposed to be oven baked but takes significantly longer. This version of the dish can be made directly on the stove and will take less than 30 minutes to complete. A great recipe for the whole family. The kids love the combination of banana and peanuts.

2 servings

Ingredients:

2 chicken breast fillets1 cup whipping cream0.5 lbs bacon1 banana0,2 cups peanuts2 tbsp chili sauceSalt Pepper Mix of herbs

Directions:

Slice the chicken breasts in cubes. Fry the chicken cubes and add salt and pepper. When the chicken is getting ready, add whipping cream and simmer until the cream is starting to get bubbly. Slice the banana and put it in the frying pan along with the other ingredients. Add some extra salt and pepper, some chili sauce and herbs. You can either fry the bacon separately until it’s crispy and then put it in the main pan or add it directly to the frying pan with the other ingredients.

Last but not least, add the peanuts and stir.
